A new installment in The Kitchen Adventures of nin.

Before going down to California the other week I ordered an electric wok from Amazon, hoping it would make it here from Brooklyn before I left. Alas, it got here the day I left, and Peter had to get it redelivered to his work, where, hilariously, it sat until the weekend. But then all last week I applied myself to exploring its myriad possibilities.

First I made my veggie stir-fry. Delicious.

Then I used it to deep-fry curry croquettes. Delicious, but at one point the heat dropped. I think it was my fault for not making sure the plug had clicked in properly.

Then I made yakisoba. Delicious!

Then last night I made fried rice. Ohh my goodness, delicious! And I don’t have a layer of rice gunk fused to the sides of my wok! Cuz it’s so beautifully non-stick! I love making fried rice, but it’s such a pain in the ass if you use a non-stick frying pan (always too small) or a regular wok (sticky).

Anyway, I recommend it. My trusty old wok was wonderful and well-seasoned along the bottom, but just isn’t well-suited to an electric range. It wasn’t heating properly or enough, and it was just going to wreck my stove. And because I couldn’t season it up the sides properly, stuff would always stick to it up there, which meant I had to use water on it and scrub it, and everyone knows what a bad idea that is… So it was a good choice, my electric wok. And it gets lovely and hot, and has a proper curved bottom, and generally is ideal. Let’s all just hope nothing happens to it.
